Splenda/sucralose is a chlorinated hydrocarbon and is merely the latest in a long and growing list of toxic artificial sweeteners. Why would you want to add toxic chemicals to your food and drink? You might not want to, but private for-profit corporations are only to happy to do so, if they can make a few bucks on the deal: Splenda/sucralose toxicity
The New Joy of Cooking cookbook reviewed:

Most of us cook some our daily food. I found an old copy of the Joy of Cooking about twenty-five years ago and it has been my basic cooking bible ever since. It was originally written by Irma S. Rombauer and first published in 1931. The copy that I treasure was co-written by Marion Rombauer Becker and was published in 1975. There was a new completely revised version, The All New All Purpose Joy of Cooking which was published in 1997. It was co-written by a third author/editor, Ethan Becker. This book was a big disappointment to me. It lost some of the original book's charm. Now there is supposed to be another new newer newest version to be published in the next few years. Hmm. They say that "too many cooks spoil the broth." Maybe too many editors and writers spoil the cookbook.
